Our Story
Our story begins in India, along the historic Malabar Coast of Kerala, where centuries of trade shaped a rich culinary heritage. Early Portuguese and European influences introduced the tradition of slow-baked festive cakes, crafted to mature over time and reserved for meaningful occasions.
Kerala's bakers embraced this foundation and transformed it through regional wisdom. European methods gave way to deeper flavors, built on caramelized sugar, patient preparation, and spices native to the land. Over generations, the cake became an expression of place rather than origin.
At Batter & Barrel, we carry this inherited tradition forward with intention. We thoughtfully enrich it with select Kerala spices and ingredients, chosen not for excess, but for harmony. Each addition is measured, purposeful, and respectful of the cake's character, allowing layers of warmth, depth, and aroma to unfold naturally.
The process remains unhurried. Fruits are rested, flavors are allowed to develop, and time becomes an ingredient itself. This is how we honor the cake's heritage while making it distinctly ours.
